Soy Beef Egg Martabak: crispy outside, savory inside, and perfect for kids!
Hello! Welcome back to my channel, Devina Hermawan. Today, we're making Soy Beef Egg Martabak. This dish is a great option for snacks or lunchboxes. It's a practical snack to make and contains beef, making it nutritious for kids. Besides oil-frying, you can also use an air fryer or an oven for a less-oil option.
Here are the ingredients. I use ground beef, but you can also use chicken or shrimp. We'll marinate the beef with sweet soy sauce, oyster sauce, and tapioca flour to soften it. This will make the texture soft and easy to chew, but it's okay to skip the tapioca flour. We also need eggs, green onions, onion, and chicken powder. To wrap, I use large spring roll skin, which I bought frozen at the supermarket. You can also use lumpia skin, which usually has a round shape.
First, marinate the meat with sweet soy sauce, oyster sauce, and tapioca flour. Mix well to make the beef flavorful. Tapioca flour will soften the beef. For adults, you can just use the beef without tapioca flour. But when I give my kids ground beef, they either chew it for a long time or reject it altogether due to its coarse texture. So, marinating the beef or chicken with tapioca flour and sauces will make it softer.
Next, cut the onion into small dice so they can be cooked quickly. Slice the green onions, too. You can add vegetables, such as spinach. If you use a lot of spinach, boil, squeeze the water out, and slice before adding to the batter. Green veggies release water when cooked, which may make the batter too watery. You can also use finely grated carrots since the cooking time will be short.

Transfer the onion and green onions to a bowl and mix them with the marinated beef and eggs. I'm using 4 eggs and quite a lot of meat, but you can reduce the meat and add more eggs. I'll simply season it with chicken powder. You can add salt, MSG, and pepper, too. This batter can be stored in the chiller for 1-2 days, and you can fry it when you need it.
Add the batter to the spring roll skin. I add 2 tbsp of batter. If you prefer a thicker Martabak, you can add up to 3 tbsp. Be careful when frying. The beef is raw, so make sure it's cooked through. To oil-fry, heat the oil on medium heat. When you add the Martabak, the oil must sizzle. Otherwise, it means the oil isn't hot enough and the result will be too oily. Once it's hot, fry the Martabak on medium heat. The beef is still raw, so don't raise the heat yet. Eggs cook quickly, but beef takes longer to cook.
I'll fry the rest with an air fryer. Brush the Martabak with oil. Brush the bottom side first, place it in the air fryer, then brush the top with oil, too. Cook at 180°C - 185°C for 15 minutes. After 7 - 8 minutes, flip the Martabak so they're cooked evenly with an even color. It's crispy outside and savory inside. Fried Egg Martabak can't go wrong. The highlight is the Soy Beef. It adds some texture. Because we added tapioca flour, the beef is soft and easy to chew for kids. I think kids find ground beef tougher to chew because it's coarser than chicken. The flavor is sweet and savory due to the sweet soy sauce. Kids will love it. You can adjust the amount of sweet soy sauce as needed.
To make a less-oil version, use an air fryer. It's still crispy outside and evenly cooked inside. The beef is also still soft. However, the air fryer version won't be as fluffy and as evenly browned as the oil-fried version. But overall, you can use it and it'll still be delicious.
